Here’s my guilty pleasure… vanilla choux buns! Oh dear, oh dear… I could eat a dozen without any trouble. A soft choux pastry, a crisp craquelin with a touch of fleur de sel, a creamy pastry cream flavoured with vanilla, a hazelnut whipped ganache…

So when, on top of that, you add a little mind-blowing praline, you reach the height of indulgence with these vanilla praline choux buns! So, for my birthday last month, I treated myself and made my own birthday dessert, on holiday no less.

We were in the countryside at my in-laws’ (I’d brought my little pastry kit along :P). To lighten the workload on site, I brought a few things made the day before (the choux pastry and the craquelin dough) which I froze on arrival (I froze the choux pastry in half-sphere moulds, I talk about this technique in my article devoted to Philippe Conticini’s Paris-Brest). I’d also brought my nuts (almonds and hazelnuts) to make the praline with their Thermomix. I was really looking forward to testing the beast and I wasn’t disappointed! On site, I made the vanilla pastry cream (though I could very well have made it the day before too), the praline of course, the hazelnut whipped ganache, I baked my choux buns and did the final assembly.

Under the astonished eyes of my mother-in-law who watched me churn out one preparation after another, I managed to produce a frankly delicious little dessert! I went for 2 big choux buns per person and it wasn’t too much 😉 If you’re as greedy as I am, I can only advise you to try this vanilla praline choux bun recipe, you won’t be disappointed!

Vanilla Praline Cream Puffs

Ingredients & Method

6 components · Full recipe

Hazelnut Whipped Ganache (start the day before)

Ingredients
  • 100 g (3.5 oz) whipping cream (1)
  • 45 g (1.6 oz) white chocolate
  • 25 g (0.9 oz) hazelnut praline
  • 25 g (0.9 oz) hazelnut paste (or hazelnut praline if unavailable)
  • 2 g (0.1 oz) powdered gelatin
  • 12 g (0.4 oz) water (to rehydrate the gelatine)
  • 100 g (3.5 oz) very cold whipping cream (2)
Method
1

Rehydrate the gelatine in water for 15 minutes.

2

Make a ganache: melt the white chocolate in a double boiler until it just begins to melt. Add the hazelnut praline and hazelnut paste.

3

In a small saucepan, heat the full-fat liquid cream (1). Off the heat, add the rehydrated gelatin.

4

Pour one third of the cream over the white chocolate praline mixture and mix to create an emulsion. Then pour a second third then a third to obtain a smooth, homogeneous mixture.

5

Add the very cold whipping cream (2).

Craquelin (can be made ahead)

Ingredients
  • 40 g (1.4 oz) unsalted butter
  • 50 g (1.8 oz) light brown sugar
  • 50 g (1.8 oz) flour
  • 1 pinch of fleur de sel
Method
1

In a bowl, mix the flour, brown sugar and fleur de sel then add the softened butter and knead for a few minutes until you obtain a smooth dough.

2

Roll out the dough to a thickness of 2–3 mm between 2 sheets of parchment paper.

3

Cut out 8 discs 7 cm (2.8 in) in diameter and 8 discs 3–4 cm (1.6 in) in diameter (this way the craquelin covers the choux well).

Choux Pastry (can be made ahead)

Ingredients
  • 62 g (2.2 oz) water
  • 62 g (2.2 oz) milk
  • 2 g (0.1 oz) salt
  • 2 g (0.1 oz) caster sugar
  • 60 g (2.1 oz) butter
  • 80 g (2.8 oz) all-purpose flour (T45)
  • 125 g (4.4 oz) whole eggs
Method
1

In a saucepan, combine the water, milk, salt, sugar and butter and gently bring to a boil.

2

Off the heat, add the sifted flour all at once. Stir well with a wooden spoon.

3

Return to the heat for 30 seconds to dry out the dough (until it starts to stick to the bottom of the saucepan).

4

Remove from heat and place in the bowl of a stand mixer fitted with the paddle attachment. Run the mixer for a few minutes to cool the panade (the name for the choux pastry at this stage).

5

Beat the whole eggs into an omelette (this makes it easier to control how much egg you add).

Vanilla Pastry Cream (can be made the day before)

Ingredients
  • 400 g (14.1 oz) milk
  • 64 g (2.3 oz) egg yolks (3–4 depending on size)
  • 90 g (3.2 oz) sugar
  • 40 g (1.4 oz) cornstarch
  • 60 g (2.1 oz) butter
  • 1 vanilla pod
Method
1

In a bowl, whisk together the egg yolks and sugar until the mixture turns pale.

2

Add the cornstarch and mix.

3

In a large saucepan, bring the milk to a boil with the split and scraped vanilla pod. Remove from heat and infuse for 20 minutes covered. Remove the vanilla pods then bring back to a boil.

4

Pour a little of the hot milk into the bowl in a thin stream, whisking constantly, to loosen the cream, then pour the whole mixture back into the saucepan with the remaining hot milk.

5

Whisk over medium heat until the cream thickens (about 2–3 minutes).

6

Transfer to a bowl and add the butter cut into pieces. Whisk vigorously until the butter melts then press plastic wrap directly onto the surface.

Baking the Choux Pastry (day of)

Ingredients
  • None (see Praline recipe)
Method
1

Prepare 2 baking sheets lined with parchment paper. Since the choux are not all the same size, I recommend baking them separately rather than together.

2

Place the large craquelin discs on the large choux and the small craquelin discs on the small choux. Meanwhile, preheat the oven to 240°C / 465°F.

3

Place the tray of smaller choux in the oven first and immediately lower the temperature to 170°C / 340°F. Bake for 20 to 25 minutes (adjust according to your oven). During this time, prepare the second tray. Do not open the oven door during baking.

4

Transfer the small choux to a wire rack and leave to cool at room temperature.

Assembling the Vanilla Praline Cream Puffs

Ingredients
  • None (see Praline recipe)
Method
1

Pipe pure praline into the small choux.

2

Cut the top off each large choux bun (wide enough to slip the small one inside).

3

Place the pastry cream in the bowl of the stand mixer and whisk at full speed for 2-3 minutes to aerate it well. Transfer to a piping bag without a nozzle.

4

Fill the bottom of each large choux puff with pastry cream, then push a small praline choux inside. You can add a little more pastry cream on top to conceal the inner choux.

5

Replace the cap of the choux.

6

Whip the praline ganache with an electric mixer until firm enough to pipe but not over-whipped.

7

Pipe a large ball of whipped praline ganache on top then hollow out a hole using a Parisian scoop previously heated (with a blowtorch or under very hot water) and pipe a little vanilla pastry cream inside.

8

Decorate with a few halved hazelnuts, hazelnut skins and praline shards.
