Cyril Lignac’s Pastry Shop
Wednesday is pastry day! Hoping to keep up the pace, I’d like to publish a new recipe at the weekend and a new gourmet address on Wednesdays. And I’ve already tested a few that are patiently waiting for me to write about them on my blog… Today, I’m telling you about Cyril Lignac’s pastry shop, one I’m particularly fond of. Plus, there are several locations across Paris — how great is that! 🙂
Cyril Lignac’s Pastry Shop
I visited Cyril Lignac’s pastry shop on rue de Sèvres. I don’t (yet) know the other shops but I’m looking forward to trying them too. The shop isn’t very large but upon entering, I’m quite surprised to find it rather dim, not very well lit actually. As a result, the products aren’t particularly well showcased, which is a shame. There are some unfortunate shadows over the display case that somewhat distract the eye.
Fortunately, your gaze is quickly drawn to the pastries the chef offers: in sharing sizes or individual portions. Beautiful things. I really love the chef’s style, I have to say. The composition of each dessert is listed and that’s a detail I particularly appreciate. Tarte, entremets, baba au rhum… you should easily find something to your taste. You can also find macarons and a whole range of breads and pastries.
The staff are very welcoming too, which is lovely. In short, as you’ll have gathered, this is an address I warmly recommend. I think I can safely say you won’t be disappointed! I had the chance to taste a few pastries but I lost most of my photos 🙁 A good excuse to go back, clearly! Especially since the bags, boxes and macaron gift sets keep changing their look!

Tasting the Pastries
The tarte citron
crispy hazelnut shortcrust, lemon cream and emulsion, thin white chocolate velvet coating, shiso leaf (decoration)
Verdict: visually, I love it! I find this tartelette elegant with a super modern look. In short, I’d been wanting to try it for a while (bear in mind that at heart, I’m not a big fan of lemon tart… I’ve learned to love it over time). Overall, it’s a good dessert but I didn’t find it exceptional. Yes, you always expect to be wowed when you buy a pastry from a top chef. In fact, I found the lemon cream a bit too heavy (quite buttery!). My husband, who is an unconditional fan of this dessert, also found the butter came through a bit too much.

The vanilla flan
Verdict: flan and I — it’s a whole story. I love it!!! But we all love it in a certain way. I like mine creamy and smooth with a good vanilla flavour. I’ve had the chance to taste a few flans by top chefs but I’ve never found quite what I was looking for. Cyril Lignac’s is the one that comes closest to my personal taste — I really enjoyed it.

The équinoxe
light Bourbon vanilla cream, salted caramel crémeux, speculoos praline crunch
Verdict: a signature dessert from Chef Lignac, an essential that I strongly recommend! Visually, the blue-grey velvet is quite striking (and doesn’t remind me of any of the ingredients in the dessert). In terms of taste, it’s pure delight! The chef has brilliantly managed to marry all the flavours into a true indulgence. And it’s not heavy at all — you could almost have a second one. I love it!

The peanut and praliné chou
choux pastry, financier and peanut praliné, crunchy pearls, hazelnut and vanilla whipped ganache, crunchy Dulcey chocolate shell
Verdict: I love the look of this two-tone chou. At first glance, you can’t see all the layers and preparations. When tasting, one surprise follows another. I don’t normally like peanuts but here, I have nothing to say. Peanut and hazelnut pair beautifully, the choux pastry is exceptional, I can’t wait to find this one in the shop again!
The cappuccino
soft almond biscuit, caramel crémeux, light Kenya coffee mousse and mascarpone cream
Verdict: this is a dessert I didn’t taste as I don’t like coffee (I’ll make the effort to try next time). But my husband found it extraordinary and still talks about it. “A little marvel” according to him.
