Let’s take a break from strawberries for one recipe. After all, chocolate is the real deal! And if you have a large quantity of egg whites to use up (and no, you don’t want to make meringue or macarons!), then I recommend trying this recipe.

I took it from the blog “Chocolat à tous les étages“. A chocolate fondant made with liquid egg whites — does that sound odd to you? It surprised me a little too, but I thought it was worth a try. I added chopped hazelnuts to the recipe for extra indulgence.

Be careful to get the baking right — the baking time given in the recipe is approximate and corresponds to MY oven. It’s up to you to tame yours 😉 And it’s up to you to decide whether you want it more or less gooey. I loved this cake, and so did my colleagues. The hazelnut pieces combined with the chocolate are a real bonus. One to try the next time you have egg whites left over!

Ingredients & preparation

1 component · Full recipe

Cake

Ingredients
  • 150 g (5.3 oz) sugar
  • 50 g (1.8 oz) flour
  • 30 g (1.1 oz) ground hazelnuts
  • 50 g (1.8 oz) crushed hazelnuts
  • 150 g (5.3 oz) dark chocolate
  • 80 g (2.8 oz) butter
  • ½ sachet baking powder
  • 4 egg whites
  • 1 pinch of salt
Preparation
1

Preheat the oven to 180°C / 350°F.

2

Toast the whole hazelnuts for about ten minutes.

3

Leave them to cool slightly, then rub between your hands to remove the skins. Place in a plastic bag and crush with a rolling pin. Set aside.

4

In a bowl, mix together the sugar, flour, baking powder and ground hazelnuts.

5

Break the chocolate into pieces and melt with the butter in the microwave.

6

Add the liquid egg whites to the bowl with the dry ingredients and mix well to form a smooth batter.

7

Gently fold in the melted chocolate and butter. Whisk lightly.

8

Pour the batter into a greased tin or a silicone mould (you can do as I did and line it with a sheet of baking paper).

9

Bake for approximately 30 minutes. Check by inserting a knife — it should come out slightly moist (or with a little chocolate if you want it very fudgy).

10

Leave to cool before turning out.
