Panna cotta is a dessert I don’t make very often, but I really wonder why, given how simple it is to make and how good it is! On the blog, you’ll also find a recipe for vanilla panna cotta with a mango passion fruit coulis.
Here, it’s a mint and strawberry panna cotta, even fresher to my taste: a mint panna cotta with a strawberry coulis and fresh strawberries.
It’s a dessert that requires very few ingredients (cream, milk, sugar and gelatine) and that can really be adapted to your tastes. The cream can be flavoured with vanilla of course, but you can also infuse aromatic herbs in it (as here with mint). The coulis can also be varied. In short, it’s a recipe to keep up your sleeve for those times when you don’t feel like spending 2 hours in the kitchen 🙂

Ingredients & Method
3 components · Full recipe
Mint panna cotta
- 250 g (8.8 oz) whole milk
- 250 g (8.8 oz) heavy cream
- 50 g (1.8 oz) sugar
- about 30 mint leaves
- 5 g (0.2 oz) powdered gelatin
- 30 g (1.1 oz) water (to rehydrate the gelatin)
Rehydrate the gelatin in the water.
Place the cream, milk, sugar and mint leaves in a saucepan and bring to a boil. Turn off the heat and let infuse uncovered for about ten minutes.
Strain the milk/cream mixture through a fine sieve to remove the mint leaves. Press the leaves well to extract as much cream as possible (note: I recommend weighing your cream to know how much cold cream to add — top up to 500 g (17.6 oz) total).
Reheat briefly, then off the heat, add the rehydrated gelatin. Stir to combine.
Strawberry coulis
- 200 g (7.1 oz) strawberry purée (blended strawberries)
- 20 g (0.7 oz) sugar
- 1 g (0 oz) pectin (optional)
- a handful of mint leaves
In a saucepan, gently warm half of the strawberry purée.
Add the sugar and NH pectin, previously mixed together well. Bring to a boil while whisking and maintain for one minute.
Assembly
- a few strawberries
- a few mint leaves
Remove the mint leaves from the strawberry coulis.
Once the panna cotta has set, pour a little strawberry coulis into each glass.
Wash the strawberries, halve them and remove excess moisture by placing them on a sheet of paper towel.
To give them a shine, dust icing sugar over the cut side of the strawberries.
Place a few halved strawberries in each glass, then add a mint leaf.
