There are some essential recipes, the kind you absolutely must have written down in a little notebook somewhere. Well, this recipe is one of them! What’s more, you’re in luck: it won’t take up much room in your little notebook, because there are only 2 ingredients! And the icing on the cake, you don’t even need an ice cream maker! Royal, isn’t it? And to finish convincing you, this ice cream is simply to die for, a pure delight! Forget the little tubs of Häagen-Dazs or Ben & Jerry’s — you’re the competition now!

I’d discovered this recipe last year thanks to the blog Délice Céleste, and I’d actually given in to the Twix, salted butter caramel and chocolate chip ice cream. This time, I tried it with Lion bars. I also had some homemade caramel left over, so in it went too! And that’s what’s brilliant about this recipe: you can put whatever you like in it!! Twix, Lion, Mars, Oreo, Kit Kat and so on, salted butter caramel, chocolate chips, hazelnuts and the like too! Oh my, it’s so simple and so good!!!

No need for an ice cream maker: you put the ice cream in a tub or in little pots like I did, and off it goes into the freezer! You then get an incrediiiibly creamy and frankly indulgent ice cream!

For my part, I reduced the amount of sweetened condensed milk compared with other recipes of this type, and I find it’s more than enough. Now it’s up to you to try it and judge according to your own taste (and adjust next time by adding more or less sweetened condensed milk).

No-Churn Ice Cream

Ingredients
  • 400g (14.1 oz) heavy whipping cream
  • 140g (4.9 oz) sweetened condensed milk
  • toppings of your choice
Preparation
1

Place your mixing bowl and the electric beater attachments in the freezer for at least 15 minutes.

2

Pour the whipping cream into the chilled bowl and start beating at medium speed. As the cream begins to firm up, gradually increase the speed. The cream will slowly rise and stiffen.

3

Check the consistency periodically by stopping the beater and looking at the cream. It is ready when it is completely set — if you tip the bowl, it should not fall. Be careful not to overbeat, or it will become too fatty.

4

Add the sweetened condensed milk and fold in gently with a spatula.

5

Add the toppings of your choice. I used homemade caramel and Lion bars cut into small pieces.

6

Pour into small jars (like mine) or a container. Whatever vessel you use, it must be covered — I put cling film over the jars.

7

Freeze for at least 5 hours. Take out 5 minutes before serving — it will be beautifully creamy.
